It might be time to say goodbye to the heavy comforting BBQ dishes of the summer, and start a lighter and healthier journey towards the winter. I love all kinds of veggies so it’s always been hard for me to understand why some people (especially kids) don’t seem to enjoy them all that much.
Either way – this tomato zucchini mushroom casserole will win over even the pickiest of eaters! With the savory addition of cheddar cheese and seasonings, you won’t be able to stop at just one helping – and with a low calorie count, why should you? I know I certainly want to make a double batch of this every time, hoping to have at least some leftovers!
